Our baklava is one recipe, hand-rolled the same way in every variety — the only thing that changes is the filling. Pick pistachio, walnut or apple below; every panel is calculated from the full-batch recipe, about 100–120 calories in a 31g piece.

Pistachio, walnut or apple
Same dough, same syrup — only the filling changes. Walnuts are about 65% fat to the pistachios' 45%, so the walnut piece runs 120 calories to the pistachio's 110, with 6g of fat instead of 5g. The apple version swaps the 2.25 kg of nuts for 5 kg of peeled apples and 150 g of cinnamon — mostly water and fruit sugar — making it the lightest piece: 100 calories with 3g of fat, a touch more sugar (10g total), and no nuts in the recipe.
Made with real butter
Two kilograms of unsalted butter (about 18 sticks) is folded into every value above — roughly 25 calories of each piece, nearly all of the 2g saturated fat, and all 15mg of cholesterol. Salted butter instead would push sodium to about 40mg a piece.
Salt, confirmed at 25g
Salt is the main sodium source. At 25g it contributes about 17mg of the ~20mg total per piece — a low 1% Daily Value.
How this was calculated
USDA FoodData Central reference values per ingredient, summed across the batch and divided by 576, then rounded per FDA rules (21 CFR 101.9). Water contributes no nutrients; baking moisture loss changes piece weight, not nutrient totals. Eggs taken as large (50g), flour as enriched all-purpose, butter as unsalted, nuts as raw pistachios or raw English walnuts, apples as raw and peeled, cinnamon as ground. Added sugars are the granulated sugar; the apple version's extra gram is the fruit's own. %DV is computed from unrounded values on a 2,000-calorie basis.
